New York Cheesecake

Ingredients

  • About half a cup of flour
  • 1 tablespoon of cornstarch
  • 4 large eggs
  • 4 packets 8oz cream cheese
  • half a cup of yogurt (any flavor will do but plain is good if you want the 'classic' new york cheesecake
  • 2 tablespoon lemon juice
  • vanilla extract
  • 1 cup sugar
  • crumb crust

Step 1

Let your cream cheese sit out in room temp for about 2 hours, so it will be soft. In a very large bowl, combine yogurt, flour and one tablespoon of cornstarch. Add cream cheese and beat well, I use my hands to mix it (gotta make sure your hands are clean though) this is better than a beater because the cream cheese is kinda hard.

Now add your eggs one by one and start mixing it into your batch. I prefer doing it one by one to even out of eggs easier. The add your 1 cup sugar and mix evenly. Then your vanilla extract and lemon juice. Mix until its very smooth in texture.

I forgot to take a pic of the cheesecake before baking so I took a pic about 20 minutes into baking it. Bake for 325 degrees for about 60 min. or until the top layer is golden brown.

Finished: Let sit outside for about 2 hours and put in fridge for about 2 hours or overnight.

the list of ingredients does not tell how much cornstarch to use. but step one says “cornstarch” ...how much?

I saw your recipe for the cheesecake and well I am concerned on a few factors. One being I am a pastry chef and I love a good cheesecake recipe and I love new york cheesecake a lot and I am not saying that the recipe isn’t good but you did something wrong because I have baked several cheesecakes in my day and none have turned up burnt and cracked. Now you have your recipe but your cheesecake looks like a burnt careless disaster, I mean if you are gonna show your recipe for the cheesecake please don’t make us New Yorkers look bad with that horrible excuse for a cheesecake. Please don’t insult us with stupidity because anyone knows that your supposed to use a water bath and reynolds wrap around the bottom of the spring form pan.
