Ingredients

  • left over rice or if you're cooking it the same day, make it dry.
  • 6 eggs (Depends on how much rice you have.)
  • chicken (or any left over meat you have)
  • Shrimp
  • Fish sauce
  • Black pepper
  • Assorted veggies
  • Soy sauce

Step 1

Crack your eggs into a bowl. Add some fish sauce.

Thaw and rinse your veggies. The set them aside.

Shrimp:

Chop up the shrimp into little peices so you can get some shrimp in every bite.

Chicken in some soy sauce and pepper before frying:

Cook the chicken. Make sure you sear it on high heat to sear in the juices and then turn it low.

Every kitchen should have one of these to cover the pan.

Chicken is done. You should have crusty stuff on the bottom of the pan, that's good stuff. I usually toss in the veggies and mix it up

Take the veggies out and put in the rice.

Pour 1/4 of the eggs onto the rice like this. Add more depending on how you like your fried rice. Some people like to coat the whole pan with egg and then put the rice in. If you like chunks of eggs, you can do it that way.

Get 2 spatulas and toss, toss, toss. This is all done on high heat. It should look like this: When the rice is done you can just put in the meats and veggies and toss them around for a minute. Usually I make too much and have to take out half of the rice and do 2 batches.

The end result was ok… Would have helped if I knew how much of which ingredents to add… I got confused on what to do with all of the eggs? But over all it was ok…
