Ingredients

  • Panchetta (if you can't find any use bacon like I did)
  • Onions
  • garlic
  • Tomatoes (I used yellow heirloom tomatoes)
  • French baguette

Step 1

Sadly I couldn't find any panchetta so I used bacon, but certainly use the panchetta if you can. Anyway fry up strips.

Remove the bacon and dispose of some of the grease leaving a few tablespoons for the onions. Once the onions start browning add your garlic and saute a bit more.

Remove the onion/garlic from the heat and place it in a bowl, then dice a tomato, in this case a rather homely and yummy looking very meaty yellow heirloom tomato.

Put the onion and tomato mixture on some toasted bread and add the panchetta (bacon in this case). Then broil them for 5 min.
