Bruschetta Pomodoro All’Amatriciana
Jan 13, 2005 by HoChiWaWa | 0 Comments
Ingredients
- Panchetta (if you can't find any use bacon like I did)
- Onions
- garlic
- Tomatoes (I used yellow heirloom tomatoes)
- French baguette
Step 1
Sadly I couldn't find any panchetta so I used bacon, but certainly use the panchetta if you can. Anyway fry up strips.
Step 2
Remove the bacon and dispose of some of the grease leaving a few tablespoons for the onions. Once the onions start browning add your garlic and saute a bit more.
Step 3
Remove the onion/garlic from the heat and place it in a bowl, then dice a tomato, in this case a rather homely and yummy looking very meaty yellow heirloom tomato.
Step 4
Put the onion and tomato mixture on some toasted bread and add the panchetta (bacon in this case). Then broil them for 5 min.
