Bruschetta Pomodoro All'Amatriciana

Ingredients: - Panchetta (if you can't find any use bacon like I did) |

Step 1: Sadly I couldn't find any panchetta so I used bacon, but certianlly use the panchetta if you can. Anyway fry up strips. |

Step 2: Remove the bacon and dispose of some of the grease leaving a few tablespoons for the onions. Once the onions start browning add your garlic and sautee a bit more. |
|

Step 3: Remove the onion/garlic from the heat and place it in a bowl, then dice a tomato, in this case a rather homely and yummy looking very meaty yellow heirloom tomato. |
|
|
Step 4: Put the onion and tomato mixture on some toasted bread and add the panchetta (bacon in this case). Then broil them for 5 min. |
