Intro

For some reason one of those spices I have always associated with Christmas time is ginger. Maybe it’s the gingerbread houses people build, or just one of those types of cookies people make for the holidays. This is a really simple recipe, and the first time I made it.

  • Cook: ~30 mins.
  • Serves: 18

Ingredients

  • 1.5 c. Flour
  • half a teaspoon Salt
  • 1 tsp. Baking Soda
  • half a teaspoon Cinnamon
  • half a teaspoon Ground Ginger (I decided to spice things up and went with fresh ginger and 1 tsp of that)
  • half a cup Sugar
  • 1/3 c. Shortening
  • 1 egg
  • 1 tsp. Vinegar (I used Apple Cider)
  • 1/3 cup milk
  • 1/4 cup Molasses

Step 1

Preheat oven to 350, this may vary. My oven is really bad. Sift together flour, salt, baking soda, cinnamon and ginger.

Cream together shortening and sugar. Add egg to creamed mixture and mix thoroughly.

Mix together milk, vinegar and molasses.

Add milk mixture to creamed mixture, then slowly add sifted ingredients and mix.

Spray down some pans and add teaspoon sized drops of batter about 2 inches apart.

Have your self a drink while the ginger cookies bake for about 8-10 minutes. I set a timer for 8 minutes and checked every minute or so. Let cool and move to rack to cool completely.

I made the majority of my ginger cookies quite large so I only got about 18 cookies out of them.
