Ingredients: This will hopefully be the first of a series of simple recipes that you can whip up after a hard day. These are some of my cheap and easy standbys for busy weekday nights. |

Step 1: Dice yor peppers, onion and garlic, sweat over medium heat. |
|

Step 2: Add your corn, beans and tomatoes. Don't bother to drain first, just dump it all in. |
|

Step 3: Spice to your liking. |
|
|
Step 4: Simmer uncovered for 20 minutes until heated through. |
|
Step 5: Add cheese to thicken, I used a hunk of cheddar I had in the fridge but feel free to use whatever strikes your fancy. Add a few teaspoons of lime juice. |

|
Step 6: I prefer Tostidos Gold for this because it's a heavy bean dip. |
