Bean Dip

This will hopefully be the first of a series of simple recipes that you can whip up after a hard day.  These are some of my cheap and easy standbys for busy weekday nights.


  • Prep: ~30 mins.
  • Cook: ~30 mins.
  • Serves: 4

  • 1 Can black beans
  • 1 Can diced tomatoes
  • 1 Can Corn
  • 1 Red Pepper
  • 1 Green Pepper
  • 1 Onion
  • 2 cloves garlic
  • Cumin (any other spices you like)
  • Lime Juice
  • Shredded Cheese

Step 1

Dice your peppers, onion and garlic, sweat over medium heat.


Step 2

Add your corn, beans and tomatoes. Don't bother to drain first, just dump it all in.


Step 3

Spice to your liking.


Step 4

Simmer uncovered for 20 minutes until heated through.


Step 5

Add cheese to thicken, I used a hunk of cheddar I had in the fridge but feel free to use whatever strikes your fancy. Add a few teaspoons of lime juice.


Step 6

I prefer Tostidos Gold for this because it's a heavy bean dip. The beauty of this recipe is in it's adaptability. Like corn but not red peppers? Then can the peppers and add more corn!
