- 2 large egg plants
- 6 eggs
- 250 gr. (3 cups) grated cheese
- bread crumbs
Cut the egg plant.
Powder some salt on each side and let it sit for 10 min.
Wash out (get off all the salt) and cover both sides with flour.
Fry and let it drain on a paper towel.
The filling: grated cheese + egg + pepper + minced parsley.
Mix well, it will look like this.
Mix 3-4 tbs of flour with the rest of the eggs.
Now lets start to fill the wallet.
Press the wallet well.
Put the wallet in the mixture (eggs and flour).
And roll it on bread crumbs.
Fry the wallets.
Finished Eggplant wallets.
