Intro

I will admit it. I don’t like baking oatmeal cookies.

Why? Because whenever I bake oatmeal cookies, they turn out very flat, and very crunchy. I’m more of a soft and chewy sort of cookie gal.

But when I found this easy no bake oatmeal cookie recipe, I was super excited.

  • Prep: ~30 mins.
  • Cook: ~30 mins.
  • Serves: 7

Ingredients

  • 2 c. rolled oats
  • 3/4 c. white sugar
  • 3 tbs. unsweetened cocoa powder
  • 1 tbs. water
  • 1/2 tsp. vanilla
  • 2/3 c. butter softened
  • 1 c. powdered sugar (aka confectioner’s sugar)

Step 1

Combine oats, sugar, cocoa, water, vanilla, and butter.

With hands, mix thoroughly into a dough.

Roll into 1 - 2 inch balls and roll in powdered sugar.

Chill the oatmeal cookies in the refrigerator for 20 minutes before serving. Enjoy! So as I continue to hunt for that perfect oatmeal cookie recipe, I will enjoy these.
