Intro

To make crunchy cookies you would normally add nuts. Instead of nuts, these crunchy cookies use sweetriot baking ‘peaces’ which are cacao nibs covered in dark chocolate. Cacao is another word for cocoa. Cacao nibs are the dry-roasted pieces of the cocoa bean. This is sweetriot’s cookie recipe that is on the back of the baking ‘peaces’ bag. Note: sweetriot baking ‘peaces’ are not suitable for those with peanut/nut/sesame allergy.

Ingredients

  • 2 sticks butter, softened
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. sea salt
  • 1 cup granulated sugar
  • 1/2 cup packed dark brown sugar
  • 2 tsp. pure vanilla extract
  • 1 large whole egg
  • 1 egg white
  • 10 ounce bag sweetriot baking 'peaces' dark chocolate covered cacao nibs

Step 1

Preheat your oven to 375 degree Fahrenheit and place the rack in the middle of the oven. Butter baking sheets or use parchment paper. Whisk together flour, baking soda and salt in a large bowl and set aside.

Step 2

In another bowl (or with a mixer) beat the 2 sticks of softened butter (one at a time, or ) and both sugars together until light and fluffy.

Add vanilla, whole egg, and an egg white. As you mix, add flour mixture slowly in batches until just combined.

Mix in your sweetriot 'peaces' (chocolate covered cacao nibs).

Step 7

Shape 2 heaping tablespoons of dough at a time into balls and place about 1 and 1/2 inces apart on a prepared prepared baking sheets. Bake until cookies are golden brown. In my oven these took around 13-14 minutes. Be sure to rotate the baking sheet halfway through cooking. Let the crunchy chocolate cookies cool completely and then enjoy!
