This is a quick and healthy egg salad recipe.
Curried Egg Salad with Greek Yogurt, Arugula, and Pistachios Ingredients
- 2 hard-boiled eggs, chopped
- 4 hard-boiled egg whites, chopped
- 1/4 cup plain Greek yogurt, 0%
- 1/2 tsp curry powder
- 2 tbsp chopped pistachios
- 2 cups baby arugula
- salt & pepper
Step 1
Mix together eggs, egg whites, Greek yogurt, curry powder, and pistachios. Add salt and pepper to taste. Lay over a bed of arugula. Or make a sandwich. Spinach can be used in place of the arugula. Feast!

Egg salad with curry powder. Sounds tasty. How spicy was it? I imagine the yogurt keeps the heat down.
