Intro

Noodles and Company has a delicious Greek salad called the Med Salad. What I love about it is the curly cavatappi pasta and the spicy greek-style yogurt dressing. This recipe shows you how to make your own Med (Mediterranean) salad at home and also how to make the Med Salad dressing from Noodles and Company.

Ingredients

  • 1 cup cavatappi pasta
  • Romaine lettuce
  • 1 cucumber
  • 1 tomato
  • 1 red onion
  • A handful of black olives
  • 1-2 tsp. sriracha hot sauce (depends on how spicy you want it)
  • 1/4 cup olive oil
  • 1/4 cup greek yogurt
  • 2 tbsp. lemon juice
  • 1 tsp. lemon zest
  • 1 garlic clove, minced
  • 1 tbsp. feta cheese, crumbled (for dressing)
  • Salt & Pepper to taste

Step 1

Boil water and cook your cavatappi pasta according to package directions. Mine took around 8 minutes.

Step 2

Wash and the tomato, cucumber, and onion.

Quarter the tomato so you have 4 quarters. Then cut each quarter in half so you have 8 tomato wedges.

If you don't like the skin on the cucumber use a potato peeler to remove it. Then slice the cucumber to your desired thickness.

Peel the red onion then slice until you have the desired amount for your (Med) Mediterranean salad. On each of your slices be sure to break the layers apart.

Open a can of olives and drain.

Hit your garlic cloves with a pan to easily remove the skin. Then mince the garlic clove or use a garlic press.

Use a grater to zest your lemon.

Step 3

How to make Noodles and Company Med Salad Dressing

Add your greek yogurt, olive oil, sriracha hot sauce, lemon zest, lemon juice, minced garlic, feta cheese (1 tbsp), and just a little salt and pepper to a food processor and blend until smooth. If you have an opening at the top of your food processor add the oil slowly while you blend.

Step 4

The spicy Greek yogurt dressing will look and taste just like med salad dressing at Noodles and Company.

Step 5

Pour the med salad dressing into a ramekin, or small dish.

Wash your romaine lettuce, and put through a salad spinner or pat dry. Assemble the lettuce, cucumber slices, onion slices, tomato wedges, and olives on a plate, and top with crumbled feta cheese. Drizzle on your homemade spicy greek-style Noodles and Company med salad dressing.

Optional: Grilled chicken, parmesan crusted chicken breast, or shrimp would make this Greek salad more filling.

I stumbled upon this site searching for the secret to the Noodles Med Salad Dressing, and thought I would mention that the olives Noodles uses are NOT black olives, but are Kalamata olives (they have more of a purple color to them and a distinct flavor over a traditional store bought can of black olives)

Thank you though for the dressing recipe, can’t wait to try it out, maybe then I can stop spending all my hard earned money on dining there smile

OMG! I just went gluten free and their sandwich with this dressing is what I was going to miss most. I made the dressing off this recipe this weekend and almost cried it was so close / good! THANK YOU!

Made the dressing! To make it with less oil, I used only 1.5 Tbsp of oil, and added more yogurt along with some more sriracha (to make it more spicy). The sauce is significantly thicker, but because I do use it more as a spread it works a lot better. I really enjoy eating this on whole wheat tortillas with lightly grilled vegetables and olives. Great recipe!.

A decent shortcut to this is to add a little sriacha to Kraft Greek feta and oregano bottled dressing.
