About this Pine Nut Cookies Recipe
These are delicious butter cookies with pine nuts / pignoli. These are NOT Italian Pignoli cookies. This pignoli / pine nut cookie recipe makes pine nut cookies that are just slightly sweet, so if your not a fan of sugary cookies, you will like them. Instead of pine nuts you could use any nuts such as peanuts or almonds. You could also add a glaze, frosting, melted chocolate or icing. It’s a very versatile butter cookie.
Pine nuts go rancid very quickly so be sure to use them shortly after purchase. Also, try to purchase pine nuts that are NOT of the Chinese variety, as they may cause a long lasting bitter metallic taste known as “Pine Mouth”.
Pine Nut Cookies Ingredients
- 1 large egg white beaten lightly
- 1 1/4 tsp pure vanilla extract
- 1/4 tsp kosher salt
- 3 large egg yolks
- 1 tsp grated lemon zest
- 1 cup pine nuts / Pignoli
- 1/2 cup sugar
- 2 sticks unsalted butter at toom temperature
- 2 1/2 cups all-purpose flour

Add the flour mixture slowly while mixing. Once the flour is all incorporated, stop mixing.
Step 7
Put a lightly beaten egg white into a small bowl and put your pine nuts in another bowl.
Make 1" balls of dough (about 1 heaping tbsp) and dunk the top and roll the sides of the dough balls into the egg white. Leave what will be the bottom of the balls free of egg white as you do not want the pine nuts to stick to the bottom. Then roll the top and the sides of the dough balls in the pine nuts.

Put the dough balls onto sheets of parchment paper spaced 2" apart with the pine nut side facing up. Bake at 350 degrees Fahrenheit for about 18 minutes, or until the pine nuts are getting golden brown and the pine nut cookie edges are lightly golden.
