I love going to the Otto pizzeria in New York City for their delicious pizzas.  One of their pizzas is a mushroom pizza with taleggio cheese. I wanted to create my own version of it using puff pastry instead of regular pizza dough. I also wanted to create a puff pastry pizza that is a twist on pissaladiere. However, Instead of using black olives I wanted to add some Indian flavor.

I love making mini pizzas using puff pastry because they are so light and crispy! You can also make a classic like basil, tomatoes, and mozzarella or go all out with creativity!  I even used the puff pastry to make apple turnovers for dessert!


Ingredients for Mushrooms-Taleggio- Parsley Puff Pastry Pizza

- Taleggio cheese (or any of your favorite cheeses!)
- About 2 handfuls of mixed mushrooms (cleaned and chopped bite size)
- A handful of fresh parsley, roughly chopped
- Puff Pastry (1 box, thawed)
- Chili powder (or Paprika)
- 2 tbsp extra virgin olive oil

Step 1

Preheat oven to 350 degrees. In a pan over medium heat, add olive oil. When the oil is hot (about a minute), add mushrooms and cook for about 5 minutes until they get a nice golden brown color. Sprinkle very lightly with chili powder (or paprika). Set aside. Roughly chop your parsley and set aside as well.

Step 2

The rest is easy! On a sheetpan, lay your puff pastry (I cut one sheet into quarters). Start by adding your cheese, top with mushrooms and cook for 15 minutes. Top with a good amount of parsley, season with salt & pepper and serve your puff pastry pizza!

Step 3

Curried Potatoes- Caramelized Onions- Anchovy Puff Pastry Pizza Ingredients:

- 1 1/2 medium size onions, chopped in 1/2 then sliced into half moons
- Canned anchovies, drained, rinsed and patted dry with paper towels
- 1 Yukon Gold potato (or other potato), cut into cubes
- 1 tsp Madras curry powder (or 1/2 tsp cumin)
- 3 tbsp neutral oil (canola, grapeseed)
- 1 tbsp unsalted butter

Preheat oven to 350 degrees. In a pan over medium heat, add oil. Add chopped onions and cook for about 7 minutes.

Step 4

Lower heat and cook for another 20 minutes, until onions are golden brown and caramelized (add more olive oil if the pan looks dry). Set aside.

Step 5

Bring a small/medium pot of water to boil. Dice the potatoes and boil for about 7 minutes (until potatoes are almost tender). Drain and put in a bowl.

Step 6

Add Madras curry powder and mix well. In a pan over medium/high heat, add butter. Add potatoes and fry for 3 to 4 minutes (test with a knife. The center should be soft).

Step 7

Your prep is done and should look something like this. (see photo).

The rest is easy! On a sheet pan, lay your puff pastry (I cut one sheet into quarters). Start by adding your onions, top with potatoes, 2 or 3 anchovies and cook for 15 minutes. Season with salt & pepper and serve your puff pastry pizza.

Yum and Yum!!!! I can’t wait to make the mini pizzas.  The most helpful thing is your pictures and your step by step instructions are great too.  Thank you for these ideas. It’s the holiday season and I need appetizers for my Christmas Eve party. I will give this a go! Cheers!
