Sigeumchi Namul is a Korean spinach "salad" side dish consisting of blanched spinach, garlic, green onion, soy sauce, sesame oil, and sesame seeds. This Sigeumchi Namul recipe is great for vegetarians or anyone who loves spinach.


  • 2 bunches spinach
  • 2 cloves garlic
  • 1 stalk green onion
  • 1.5 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds

Step 1

Cut the green onion.

Step 2

Cut the spinach.

Step 3

Mince the garlic.

Step 4

Wash the spinach until clean.

Step 5

We are going to blanch the spinach. Boil the spinach for 30 seconds.

Step 6

Then rinse the spinach in cold water 3 times.

Step 7

Squeeze the spinach gently to get the water out.

Step 8

Place 2 cloves of minced garlic, 1 chopped green onion, 1.5 tbs of soy sauce and 1 tbs sesame oil in a large bowl.

Step 9

Mix everything up with a spoon.

Step 10

Place the spinach into the sauce and mix throughly.

This looks absolutely delicious! I love cooked spinach, but it’s really only good when it’s cooked fresh, not canned/cooked spinach.  Interesting, the way you cooked it, it almost looks like noodles. Yumm! great post.

Hi Mary Jones. Yes, this recipe is very healthy because the spinach is not over cooked. It is still crunchy and the vitamins still remain.
You can try if you have chance. Delicious!
