Watermelon salad with feta and mint is a traditional Greek salad that is perfect for summer. The sweet watermelon and cool mint make this salad light and incredibly refreshing. The feta cheese adds just the right amount of salty creaminess. The addition of extra salt sprinkled on the watermelon helps to bring out its sweetness.

For this watermelon salad recipe I used a seedless watermelon. The white things that looks like seeds in the photo are just the seed coats of un-mature seeds. These seed coats are edible. You don’t even notice that they are there.

  • watermelon
  • mint
  • feta cheese
  • salt (optional)

Step 1

Wash the watermelon with soap and water. Cut the watermelon in half and slice it up like shown in the photo. You want rectangular pieces of watermelon that are wide enough to take a scoop out of with a melon baller or rounded tablespoon measure.

Step 2

Trim the piece of watermelon into a perfect rectangle shape.

Step 3

Use a melon baller or a rounded tablespoon measure to scoop out the top of one side of the watermelon piece. Place some feta cheese into the hole you just made. Place a mint leaf on top of the feta cheese. Sprinkle some salt on top of the opposite side of the watermelon. Plate the rectangular piece of watermelon on a chilled plate and garnish with some fresh mint.
